Sat here at my desk [yes, dear employer - on your time!] and thought i'd take fifteen minutes out to write you all a quick, witty, anecdotal blog!... Well, see... it's been a while!

So, I emailed someone I don't know today and they emailed back straight away to tell me that I use a lot of dots - this is totally a business contact right - so, I emailed straight back to say "i'm the King of Dots" I wonder if that gets me any discount?

You need:
2 tablespoons vegetable oil
500g topside beef fat & sinew removed, cut into 2cm cubes
300ml beef stock
1 onion, brunoise
400g sweet potato cut into 2cm cubes
500ml coconut milk
2 tablespoons Massaman curry paste
30g peanuts, roasted
2 tablespoons palm sugar
2 tablespoon fish sauce
2 teaspoons tamarind paste

Method:
1. Heat oil in a wok add the meat and seal over a high heat.
2. Add in the stock and simmer for 20 minutes.
3. Add in the sweet potato, coconut cream, curry paste and continue to simmer until the meat and potato are tender, do not allow them to break up. The potato may need to be removed if it is over cooking.
4. Add in the peanuts, sugar, fish sauce and tamarind paste. Allow to simmer until flavours infuse.
